Tiramisu Recipe

This classic Italian dessert is rich, creamy, and perfect for special occasions.

Ingredients

For the Cream Layer:

  • 3 large eggs (separated, room temperature)
  • 100g caster sugar
  • 250g mascarpone cheese

For the Coffee Layer:

  • 300ml strong coffee (cooled, espresso preferred)
  • 2 tablespoons coffee liqueur (e.g., Tia Maria or Kahlua, optional)

For Assembly:

  • 200g savoiardi biscuits (ladyfingers)
  • Cocoa powder (for dusting)

Instructions

  1. Prepare the Coffee:
    • Brew strong coffee and let it cool. Add the coffee liqueur if using. Pour into a shallow dish and set aside.
  2. Make the Mascarpone Cream:
    • In a large bowl, whisk the egg yolks and caster sugar until pale and creamy. This can take about 3-5 minutes with an electric whisk.
    • Add the mascarpone cheese to the egg yolk mixture and gently fold until smooth.
    • In a separate clean bowl, whisk the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture in two additions, being careful not to deflate the mixture.
  3. Assemble the Tiramisu:
    • Quickly dip each savoiardi biscuit into the coffee mixture for 1-2 seconds. Don’t soak them; they should absorb the coffee but remain firm.
    • Arrange a layer of the soaked biscuits in the bottom of a 20cm square dish or similar.
    • Spread half of the mascarpone cream mixture evenly over the biscuits.
    • Add another layer of soaked biscuits on top, then spread the remaining mascarpone cream over them.
  4. Chill:
    • Cover the dish with cling film and refrigerate for at least 4-6 hours, or overnight for the best flavor and texture.
  5. Finish and Serve:
    • Just before serving, dust the top generously with cocoa powder.
    • Slice and serve chilled.

Tips:

  • For a more decadent version, sprinkle grated dark chocolate between the layers.
  • You can substitute the raw eggs with pasteurized eggs if preferred.
