Tiramisu Recipe
This classic Italian dessert is rich, creamy, and perfect for special occasions.
Ingredients
For the Cream Layer:
- 3 large eggs (separated, room temperature)
- 100g caster sugar
- 250g mascarpone cheese
For the Coffee Layer:
- 300ml strong coffee (cooled, espresso preferred)
- 2 tablespoons coffee liqueur (e.g., Tia Maria or Kahlua, optional)
For Assembly:
- 200g savoiardi biscuits (ladyfingers)
- Cocoa powder (for dusting)
Instructions
- Prepare the Coffee:
- Brew strong coffee and let it cool. Add the coffee liqueur if using. Pour into a shallow dish and set aside.
- Make the Mascarpone Cream:
- In a large bowl, whisk the egg yolks and caster sugar until pale and creamy. This can take about 3-5 minutes with an electric whisk.
- Add the mascarpone cheese to the egg yolk mixture and gently fold until smooth.
- In a separate clean bowl, whisk the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture in two additions, being careful not to deflate the mixture.
- Assemble the Tiramisu:
- Quickly dip each savoiardi biscuit into the coffee mixture for 1-2 seconds. Don’t soak them; they should absorb the coffee but remain firm.
- Arrange a layer of the soaked biscuits in the bottom of a 20cm square dish or similar.
- Spread half of the mascarpone cream mixture evenly over the biscuits.
- Add another layer of soaked biscuits on top, then spread the remaining mascarpone cream over them.
- Chill:
- Cover the dish with cling film and refrigerate for at least 4-6 hours, or overnight for the best flavor and texture.
- Finish and Serve:
- Just before serving, dust the top generously with cocoa powder.
- Slice and serve chilled.
Tips:
- For a more decadent version, sprinkle grated dark chocolate between the layers.
- You can substitute the raw eggs with pasteurized eggs if preferred.
