Chocolate Lava Cake Recipe
Serves: 4

Cook Time: 12โ14 minutes
Ingredients:
- 115g unsalted butter
- 175g dark chocolate (at least 70% cocoa solids)
- 2 large eggs
- 2 large egg yolks
- 50g caster sugar
- 30g plain flour
Instructions:
- Preheat oven to 220ยฐC (200ยฐC fan)/Gas Mark 7. Grease four ramekins with butter and dust with a bit of cocoa powder to prevent sticking.
- Melt butter and chocolate together in a heatproof bowl over a pan of simmering water (or microwave in short bursts, stirring between each). Set aside to cool slightly.
- In a mixing bowl, whisk the eggs, egg yolks, and caster sugar until the mixture is pale, thick, and creamy.
- Combine the mixtures: Gently fold the melted chocolate and butter into the egg mixture. Sift in the plain flour and carefully fold until just combined. Avoid overmixing.
- Fill ramekins: Divide the mixture evenly between the prepared ramekins.
- Bake: Place on a baking tray and bake in the oven for 12โ14 minutes. The edges should be set, but the centre should still be soft and gooey.
- Serve: Allow to cool for 1โ2 minutes. Run a knife around the edges to loosen, then invert onto serving plates. Serve immediately with vanilla ice cream or whipped cream.
